Let’s not forget what this holiday’s about and remember all those who’ve served our nation. Thank you for your service.

Here’s hoping that everyone has a wonderful holiday weekend filled with family, friends, and great grilling. Here’s a terrific guacamole recipe to have with those hot dogs and hamburgers.

guacamoleTomatillo Guacamole – it’s absolutely more-ish!

3 avocados – peeled, pitted, and mashed
3 tomatillos, husked and chopped
1 red onion, finely chopped
3 roma (plum) tomatoes, seeded and chopped
3 blistered jalapeño chilies, seeded and minced
1/4 cup finely chopped fresh cilantro
1 1/2 to 2 tablespoons lime juice salt and pepper to taste
Mist the jalapenos with olive oil and set them under a broiler on high to char and blister them
In a medium bowl, mix avocados, tomatillos, red onion, roma tomatoes, jalapenos, cilantro, and lime juice. Season with salt and black pepper. Cover, and refrigerate at least 45 minutes before serving.



In Memoriam

flag - americanToday is Memorial Day in the United States. The day we set aside to honor and thank those dedicated, courageous men and women who have died while protecting our country, our rights, and our freedom.

Our armed forces are second to none.

It’s a Sunday tradition for the dh and I to watch This Week with George Stephanopoulos. Toward the end of the show, the names of all those who died in service are listed on the screen. I make it a point to read each and every name and say a prayer for all of our fallen soldiers.

I am so pleased to tell you that during the last couple of months, we have gone three weeks in a row without a single name being listed.
